Low carb Jambalaya

Been staying pretty strict to Keto, but with some jambalaya threads popping up lately it got me fiending for some. I tried out a recipe recently for a cabbage roll soup that subbed riced cauliflower for the rice, and it came out really good. Decided to take a crack at a rice less jamb.
Chopped up some Boston butt, veggies, and fresh andouille from Ronnie's (yeeeeeah buddy)
Browned down the meat
Removed meat, added veggies and seasonings
Browned down the veggies and deglazed with some chicken broth
Added the meat back in turned the heat back up
Threw in 4 packs of Riced Cauliflower from Trader Joes.
Stirred it all together well, covered, and let it sit on low for about 20 min.
It actually tastes damn good believe it or not, the main thing it's lacking is that glorious texture rice provides.

I'd attempt to recreate your jambalaya, I think.
I tried to do a stir fry recently, but I let the cauliflower cook too long and it was mushy. A cross between really good and kind of disgusting.

No Rouses in big ol' Lake Charles. I stopped shopping at albertson's because my local kroger has much better prices and produce quality. I'll swing by and stock my chest freezer with those though. Thanks.

That actually looks really good, and I imagine you got the flavors pretty spot-on.
However, jambalaya, as much as any dish there is, is basically a showcase for rice's glorious texture (as you mentioned). I just can't imagine jambalaya without it.
Hell of an effort, though! I'd eat it if you gave it to me, but I wouldn't ever cook it for myself.
