GF made ceviche out of some Royal Reds the other night... No idea of the recipe, but it was awesome.

Love a good seafood omelette.
Also, an old school shrimp salad: shredded iceberg or torn butter lettuce, quartered hardboiled eggs, a little crumbled bacon, peeled boiled shrimp, swathed in a mustardy vinaigrette; bonus points for chopped chives or green onions.
How about marinated shrimp? Sort of like a cooked ceviche. Good in lettuce cups, on a chilled plate.
