Louisiana Taste Fair

My son's school is doing a Taste Fair this spring of Louisiana dishes for their grade including parents and grandparents. I have to submit three options and they tell me which one I need to cook to make sure there aren't duplicates. I need some easy ideas and know you guys can come through.

Did that for my older son and it was a pain in the arse. Right now thinking about Hush Puppies, Corn Bread Muffins, or either boudin or rice dressing. I would just buy the boudin. I can cook a lot of different things, but I don't want to deal with the hassle of bringing it to school and keeping it warm.

all 3 of those should be easy as hell for you to make and not very expensive.

roast beef w/dubris is super easy, just takes time and a slowcooker.
