Louisiana ceviche

Anyone have a ceviche recipe that has a southern influence?

2 dozen limes
1 purple onion
1 red bell pepper
1 yellow bell pepper
3 jalapenos (removed the seeds)
1 bunch of cilantro (didn't use all of it)
1 red snapper fillet
Splash of olive oil
Salt and pepper

You think a cap full of crab boil would be worth trying?

Also I haven't seen a ceviche using crawfish? Thoughts?

This is off the Louisiana theme, would a little chipotle pepper / sauce work?

raw tuna is my favorite protein for ceviche.
