Oklahoma Joe's, Gates, and Arthur Bryant's are the holy trinity of KC BBQ, so definitely cross one or all of these off your list depending on how much time you have.
Jack Stack is a bit more upscale than your average BBQ joint, but do yourself a favor--go there, order the KC BBQ Sampler with the Crown Prime Beef Rib, Lamb Ribs, and Burnt Ends and get a side of the Cheesy Potato Bake.

Was just there for 2 days last week and did exactly this- except my 3 meet plate differed slightly. Awesome meal though.

Go checkout Cinder Block Brewery if you get a chance...great beers and they have a cool little bar area. LINK
Wife is headed there today, there is a good possibility we may be moving there this year. When we went last year the people were great. She is meeting with 4 people including the CEO tomorrow and Friday.
Also if you are looking for something to do, go check out the WWI memorial museum, it is first class!
