My parents are making shrimp merliton and asked if I'd bring something else with seafood. In the past Ive made bbq shrimp and grits. They loved it but I wanted to try something else.

My mom didnt sound too impressed with crab beignets which is unfortunate bc I was looking forward to that.

Any ideas for a seafood dish I could bring?

I made this Shrimp Scampi recipe for Friendsgiving once, and it was a huge hit. As they say at the top of the page, don’t skip the marinade step. That’s what makes it.

I’ve also done and would recommend:

Donald Link’s Shrimp Remoulade

Ruth’s Chris recipe Crab Cakes (with their remoulade sauce recipe)

Oyster patties

You could also do something like a crawfish pie as well

Shrimp Mosca is good. (At least my wife’s version - she adds some lemon juice I think and cooks the shrimp a bit less than the recipe says and probably removes them while reducing the liquid a bit so they don’t overcook.) Love dipping french bread in that sauce.

Is she stuffing the mirlitons or making a casserole with them?

If stuffing individual ones, how about an eggplant/shrimp/cheese casserole.

I make a mean one:

Peel and dice the eggplant in small cubes
1 onion diced
3 pieces celery diced
8 cloves garlic minced
1 bunch green onions chopped fine
Parsley chopped fine to taste
Slap Ya Mama
Black Pepper
Shrimp stock
Olive oil
Italian Bread Crumbs
Parmesan Cheese
Mozzarella Cheese
Fresh shrimp
Seafood Seasoning

Boil fresh shrimp in seafood seasoning just long enough to firm them up and lightly cook them. Strain and set aside to cool. Once cool, cut the shrimp in small bitesize pieces. I use 16/20's and cut them in 3 pieces each.

To fix the eggplant:

Put olive oil in a pan, add onion and celery to start cooking for a couple minutes. Add cubed eggplant and shrimp stock and let this cook for several minutes. Then add garlic, Slap Ya Mama and pepper and let cook about 10 minutes and then add green onions and parsley. Continue cooking until the eggplants gets very tender.

Remove from stove and put mixture in a large bowl and add bread crumbs, parmesan cheese and cut up shrimp. I like it to be firm enough to hold together well when mixing.

In a greased casserole dish, pour the eggplant mixture and spread it evenly, sprinkle more parmesan on top of casserole, then add the mozzarella cheese on top of that.

Bake in a 350 degree oven for 45 minutes or until the cheese melts and lightly browns.
