Looking for a sausage recipe - Chicken Pineapple Sausage

I don’t have a recipe, I make sausage as I go and how I feel it will taste good. Start with chicken thighs, grind them. Add dehydrated pineapple. Many people like jalapeños with it too. Mix in whatever seasoning you think will be good. Cook a little piece on the stove to taste it. Adjust your seasoning and stuff it.

You trying to make the sausage iseld it or buy it? You looking for instructions on how to cook it?

If you simply want to buy it Bayou Boucherie in Matthews and Rouses both sell it.

Lately I've been baking mine at 425 for about 20-25 minutes. Skin comes out crispy and it's still juicy on the inside.

I don’t have a recipe but I don’t think you can use fresh pineapple. An enzyme in it breaks down the animal proteins and apparently screws up the batch. I was told you can use canned pineapple, but never tried it.

Yeah, this is where I was stuck, the quest continues. I'll test out a few methods.

Pineapple is a natural meat tenderizer and will over tenderize the meat and the texture can turn to mush, this can be prevented by freezing the batch soon after making it

I get most of my deer sausage made into pineapple jalapeno, he uses fresh pineapple and fresh jalapenos and also some brown sugar and puts a light smoke on it

sorry that probably does not help much but it is like crack ...everybody loves it as an appetizer.....not very good to cook with
