not necessarily anything that would burn my arse or anything, but something good with fried foods (ie boudin balls).

Try soaking some mustard seeds in a little vinegar, then roughly crushing them. Add to your usual remoulade recipe for some zip.

Look at all of the celery root remoulade recipes online and pick one (or combine them).

Cut up the celery root into tiny pieces.

Here's Emeril's. No idea what a gherkin is.

Sounds like something sexual that would be on urban dictionary.

"She was conservatively dressed and had very good dinner manners, but as soon as we got back to my place she gave me gherkin."

ETA: My mind's in the gutter, I know.

I have a recipe for a White Remoulade sauce that is outstanding. It goes great with fried seafood, fried green tomatoes or as a dip for sweet potato fries.

White Remoulade sauce

3/4 cup mayo

2 tbs finely chopped green onions (green part only)

2 tbs finely chopped yellow onions

1 tbs Dijon mustard

1 tsp prepared horseradish

1/2 tsp minced garlic

1/2 tsp Worcestershire sauce

1/4 tsp salt

1/4 tsp pepper

*Combine all ingredients in a bowl and whisk to blend. Store in refrigerator until ready to serve.
