Looking at Nakiri knives (Japanese vegetable knife)

So many choices: Shun, Enso, Yoshihiro, etc.

Any guidance would be appreciated

You should go to chefsknivestogo.com a check out their selection. I have a shun elite santoku that I love but my favorite is a Moritaka Gyoto I got from there. Japanese carbon steel is the shite.

I have multiple Shun knives that I love, but I haven't tried them next to any of these other brands.

Don’t buy that factory made stuff when you can get one literally handmade from this site. I’m about to buy me a new 240 gyuto from there. I have a Tanaka right now that’s a fricking razor blade. It’s high carbon though and I have to be mindful when using it.

I recommend getting on the forum on the site. There is a format they recommend you follow with questions to be answered and you will get responses from very experienced people with recommendations including the owner of the site.

Well I’m not buying them to lay askew across my Boos board with a hunk of meat and post on Instagram.

And I have a big gash in my index finger right now to prove they are sharp.

I have a yoshihiro gyuto that I really like. It looks as awesome as it cuts.

I want to send it to get sharpened but I'm scared the finish will get rubbed off.

I love my Globals. Knives are very individual. You have to see what feels good in your hand

You have to feel them. I'll bet the global is light. I'll bet the wusthof is heavy. The handles are distinctly different and I'll bet they're all balanced differently. How do you grip? How big is your hand?
Do you like heavy or light knives? Are you a chopper or a rocker? Will this knife be used 5 minutes at a time or 5 hours at a time?

I have always liked the look of the shun knives but never held any of them.

To me, knives are like shoes; you can't just order from a catalog, you have to try them on. How many of these are available to handle in a store?
