They smoke fast. Montreal steak seasoning thick. Smoke as low as you can. Watch that grain and cut against it for maximum tenderness. It can come out really well.

Oh, get the butcher to cut them as thick as possible or they cook way too fast. Smoky Montreal seasoning deliciousness.

I was thinking about marinating in some Cajun power garlic sauce overnight then cooking it in a cast iron pot on stove top. Just keep adding water until fork tender if possible?

I've tried these a number of ways and haven't been able to make it work. I'll try this next.
