Leftover Prime Rib pasta dish

We have some leftover prime rib that I’d like to incorporate in to a pasta dish. Does anybody have a suggestion? I was thinking about some type of brownish sauce with mushrooms and gorgonzola or blue cheese but haven’t found anything that excites me just yet.
Plan B is to make a soup with veggies and barley.

This is a recipe for Tuscan Beef Ribs over pasta. I enjoyed this. Granted a majority of the video is around smoking the beef back ribs. But this might help spark some creative juices.

Look into some sort of ragu. Usually its short ribs but I'm sure Prime Rib would work.

Beef stroganoff is what I would do. One of my mothers best dishes that I can’t replicate. Serve over egg noodles.

I would do gnocchi with a gorgonzola cream sauce and chop up the prime rib to incorporate.
Might be a bit rich but probably a way to brighten it up some
