Leftover peanut oil for roux.

At $20 a gallon, I decided to strain and save my leftover peanut oil from the turkey fry on thanksgiving. Anyone ever made a roux with used peanut oil from a turkey fry? I can only imagine it would enhance the flavor.

Peanut oil will work just cook over medium heat and continue stirring

You’re essentially recreating Paul P’s Fried Chicken Gumbo. Don’t see how it wouldn’t work.

After you strain it, taste it to make sure there isn't a flavor from the turkey fry that you don't want in your gumbo.
