I wouldn't say "debunked". I was always taught by the chefs I worked under that if you cover a hot item (like taco meat in Tupperware), it will hold the heat longer, doing two things: continue to over cook the food, even in the fridge, and maintain the food in the "danger zone" longer. Leaving it uncovered helps it cool faster.

I'll generally let stuff cool off before storing and putting in the fridge, but for smaller batches, I doubt it makes any big difference.

You have about a four hour window to get it out of the temperature zone.


This meat is ok as long as you heat it up to 165 for at least 30 seconds an don't have a compromised immune system.

it takes 15 minutes to cook a pound of taco meat? Jesus, someone needs to teach me how to cook. 7 or so minutes normally is what it takes me. throw that bitch on about a 8 setting out of 10 on our oven, cook, drain, throw in Trader Joe's seasoning

I always start by chopping an onion (at least, usually other stuff as well) & browning it, then adding meat & seasonings. So it's not a 7 minute job if you count the prep.

Then you are doing it wrong. You need to simmer the meat with the seasoning and sauce so that the corn starch can thicken it and the meat soaks it all up. That usually takes about 5-10 mins, depending on the size of the batch. 1 pound won't take as long, but 5 pounds does

take out of freezer and put in fridge night before. Fine for the next day. Soft enough to microwave
