We have leftover crawfish, potatoes, corn, sausage, and some onions and garlic.... Looking to do something creative with it all. Any thoughts?

hmmmm... make an appetizer..
Cut the potatoes in half and gently scoop out some of the potato to make it into a little "cup".
Take the corn and cut of all the goodies and discard the core.
Take the crawfish and peel (save the shells for a stock to make a bisque)
Mix the corn, potato, crawfish meat... and maybe the sausage. Spoon it into the potato "cups" and bake at 300 for about 30 minutes...
And then go back and make that bisque. Stuff the crawfish heads and serve as garnish.

Give the potatoes to the dog. They love boiled potatoes.

Get some marinara sauce, buy/make your own crust, then cut up your leftovers and make a pizza

A Crawfish Bisque since you have the heads you can stuff is always a good crawfish boil leftover dish at my house.
And yea mash the potato or make a spicy potato salad.

Make a crawfish boil pie. Mash up the potatoes, maybe add a little butter and sour cream and cheese. In a bowl mix up everything else and put it in a pie shell. Bake.

You will make the best potato salad you've ever had if you use them boiled ones.
Same thing goes for the etouffee

I also like roasting crawfish boil potatoes. I cut them in chunks and lightly coat with olive oil. Crispy on the outside and creamy and seasoned on the inside.
