Lbs of seafood for a Bisque

I plan on making crawfish or shrimp bisque at the deer camp this week, I know generally the amount for a normal pot is 2 lbs of meat. If I'm making it for 15-18 hunters, how much should I increase the amount?

not sure how much you cook but its simple math.

when you cook, how many plates can you serve from your pot?

thats your answer, double or triple it as needed taking into account if you are feeding big boys with big appetites. just plan to feed 20 and there should be enough for the biggest eaters unless they are pigs.

Is the only thing you'll be serving for the meal the bisque?

I was planning on the bisque being the meal, with only the addition of French bread loaves.

The problem there is, it's been a long time since I've made it and when I did it was for my family which included kids and a wife, not full grown hungry hunters. Rough guess based off of what I used to make would put it around 10lbs of seafood, I'm thinking. Just wondering if that sounds about right.

10 lbs for 15-18 guys is a little over half to 2/3 of a pound of precooked protein per person.

I'd probably bump that up to 3/4 of a pound to be safe. If they all love shrimp and are big eaters, 1 lbs wouldn't be out of the realm.

Worst case you have some leftovers for lunch.

1/2 lbs per person sounds about right, assuming food for 20 servings. some will eat normal and some guys will load up on meat but you wont run out IMHO.

There are good bagged salads available that would make it easy on you.

Crawfish- Just base it on how much a pound of tails feeds for either Etouffee or bisque, which is 3-4 people, so your 15-18 hunters answer would be 5-6 pounds. Go with the highest, and if you stuff some heads, add another = 7 pounds

Shrimp- Base this one from shrimp count. Med/Large 20/30 count would be 10 shrimp per person (8-10 pcs x 17 people = 170 shrimp)

For smaller shrimp do 15 pieces x 17 = 255 pcs.

Ask them the count per pound and just go off that so you don't have to count them.

Edit- to add that I am used to buying in Kg. here in UAE, Thailand and Indonesia, so 20/30 per Kg. is the size I am referring for Med/Large
