Seems it would be better if you smoked the pork instead of slow cooking it. I dunno about putting butter on the pancakes. Seems to me you should make more of a cornmeal cake than the standard fluffy pancakes.
Put it this way, I wouldn't make it. But if I was at a brunch place and saw it on the menu, I might order it. Does that make sense?

This is a staple at basically every TN restaurant that serves breakfast. The one in the video looks so basic, it's kind of gross.

I think maple bourbon and pork would be an awesome combo. I would definitely smoke the butt, though...
