You are asking for someone to cut that anywhere down here. And are hoping they will follow through.
LA23 has done burnt ends for me even though they don't have it on the menu. When Gonzo is cutting you can point at the square centimeter you want on your plate since it is right in front of you. Both will probably go out of their way for you to get the cut you want.
The meat itself, I think you are splitting hairs so whatever floats your boat.

Unpopular opinion but Moe's brisket is sneaky good too and their Turkey is solid as well.

I have to drive by there occasionally for work, but it’s always around 9 in the morning. Never been able to eat there but sure smells tasty.
