well shite. Before i go back to town i'll post on here so people can tell me what new places i need to try. That place and Dingo's or Stroubes for BR sound like 2 choices so far.

And glass, i'm not out here for good....yet. Actually really trying to be a gypsy for a few years with no "home" and just bankroll so i can quit "work" and go to culinary school.

frick yeah coonass. I need to really back into some from of working out hard again before i challenge you in an eating contest. If i'm not in prime shape, there is no point. I am certain we would be asked to leave a buffet.

definitely. the Jose Andres place is next Sunday. I know sunday....but Friday and Saturdays were booked into July.

I'll check it out, and if as good as advertised we can work something out.

Afreaux, I always keep hearing about this place so the next time I am in Baton Rouge we need to have lunch there. We can talk about politics if you prefer.

But seriously, I would like to try this place out, even though I am sure the sodium content is way too high for me, I can handle it for one meal.

you might be shocked. Depending on what you order some latin/central/mexican dishes can be pretty moderate on that front....and some downright fresh tasting. I am talking authentic stuff....not the typical gringo shite smothered in tons of cheap cheese.

Oh, on the spanish food front. If you head to NYC any time soon let me know. One of my best friends is leaving Blue Smoke to go cook at a modern spanish called The Mercat (i think that's the name?). He could surely arrange some type of tasting/VIP deal. Dude KNOWS his shite. Filipino upbringing, classically french trained, and is a pork fanatic. Weird combo, but it works.

I avoid cheese at almost all costs now anyway, I do not feel that it adds enough to be worth the fat and calories. I am sure I could find something there that would be good and I am always about fresher food these days now. I have eaten at restaurants about 8 times now since December so I would prefer more made from scratch stuff.

Coonass is a pretty in-shape dude, with his metabolism he'd probably burn off a steak dinner on the walk back to his car.

This place really doesn't overdo seasoning like some Mexican places. I'm sure the beef soup a lot of people get for lunch has some salt in it, but it's really not noticeable in the dishes I order. You can order the fish filet with grilled veggies, and tell her exactly how you want it prepared.

What do you stuff yours with?

If I make Florida-style papas rellenas sometime soon, you're more than welcome to come enjoy some (just bring something along).

I know..and you know that I'm still thinking about this long term..so don't worry. will be harder to do from Florida, but down the road...

I make mine out of yautia and stuff it with beef or crab.

Enjoyed the Adobo today: juicy beef stew in a red tomato spicy sauce, served with rice and beans and tortillas on the side. Order of tostones, and the homemade pineapple tropical drink.

Whole meal was incredible as always, I usually get the maduros instead of tostones, but they were perfect.

Different ways to cook plantains.

Tostones are green plantains, mashed and fried with oil and served 'salty' or with adobo or mojo.

Maduros are ripe plantains, sliced and pan-fried, usually dry-not using as much oil (i like them a little crusty) and are sweeter tasting.

You can also make Tostones out of panapen, or breadfruit.

Both ways of cooking plantains are staples of the caribbean/latinamerican diet.

eta damn im hungry now i think i'll make some tostones tomorrow for dinner to go along with my left over alcapurrias lol.

I remember. I just used my map program to check the location. I had a pin there, it was La Reyna. So, I must have been impressed. I'm going to try it eventually, thanks to Afreaux.
