I've never made one stove top in LC, but I've made a large roux in an LC in the oven with no issues at all. Made the last one in the oven a few weeks ago.

I use the same little red ones I use for catfish bait. Especially after they've sat on top of the cooler all afternoon by the pond and warmed up some. Gives you a head start on the gumbo cooking.

I use a 7 qt wide or a 5 qt French oven most often. But I don’t have a giant household. When doing a big batch, I make a roux in a skillet and transfer to a 22 qt stainless steel stock pot.

I do not use my LC for making Gumbo.
Nothing about a $400.00 pot that guarantees it will make good roux.
I would not buy that pot to make gumbo, and I own it.

I use that large 20 quart pot, but I don't make one pot gumbo. I use it to make the stock and then to simmer it once it's been strained. I add the roux to the stock in the pot and go from there.

I have larger family and love my 13.25qt round dutch oven. I use it often.

Do not skip browning the hot dogs. This is an important step because if skipped, the acidity from the tomatoes will break down the franks too much.

LaCreuset make a goose pot about 15 quarts. I have a Staub 13 qt I use.
