Knife recommendations

My birthday is coming up and I’m looking to get a good knife or knives. My 2 main things I’m looking for is a knife that can debone a smoked chicken or turkey and one that can trim tri tips and bigger cuts after smoking. I realize it’s 2 really different tasks so if you have a good rec for either one I would appreciate it.

and they are cheap enough you can get several different styles. I use a DR skinning knife for cutting raw meat, a boning knife for more delicate tasks, a scalloped slicer for cooked meat and a filet knife for fish. Their chefs knives I dont find to be heavy enough in my hand so if you want an expensive knife spend it on that

Thirding the Dexter-Russell for the trimming knife.
I use a 14" Mercer for my brisket slicer.
Keep the expensive knives for your chef knives/delicate cuts.
ETA: Also feel it's a good thread to plug how Bar-A-BBQ uses a slicer to actually trim their briskets as well. Been doing it this way since I watched MadScientist's video with them a year or so ago.

I got an Amazon set of Damascus knives for $150. I like them and they are sharp and I know how to use a stone. Used to be a Wusthoff person but screw super expensive sets. I got someone a $40 chef knife and it's really nice. Good stuff from Japan online.

Dexter Russell but the iCut Pro line. Forged instead if stamped blades, egonomic handle, full tang, and hefty weight.
Affordable and good quality.
