King Mackeral

A friend of mine went trolling the other day and caught a boatload of king and spanish mackeral. Anyone know of a good way to cook it?

I always grill the fillets with the skin on, wrapped in foil. Seasoned with some lemon juice, butter, ms. dash (or something similar), and maybe a little white wine.

Grill filets or steaks with a bit of your favorite seasoning, butter and lemon juice.

It is, we went on a trip once and caught about 45 spanish and king between 4 of us...I've learned how to cook it...

they are running well right now....caught some in the rigolets.

We always cut it up and use it for bait.

Actually, fresh spanish is ok broiled, or cooked like Golfer said. Too oily to fry or freeze.
Kings on the other hand? Well, it works good for baiting a crabtrap.

Yeah I found the meat has a grey tint and looked unappetizing so I never kept one. I also hear that they have a high mercury content so I wouldn't eat it on a weekly basis.
