Keto Lasagna...Its pretty damn good

I love Italian food but trying to eat a little better. Found a recipe where the noodles are made from cream cheese, mozzarella, parmesan and 2 eggs. Bake them on parchment paper at 350 for 20 minutes. Make your sauce and layer like you would a normal lasagna. Its pretty damn good.

I haven't done it in almost 30 years but I used to buy 3 lb boxes of squid and make fried calamari.
My wife suggested flattening out the tubes and using them instead of pasta in lasagna. It was delicious but a lot of work.

That sounds close to the fat head dough that people always use to always make years ago.
For something easier just use eggplant sliced longways and make an eggplant and meat "lasagna." You will have way less calories and it will set up like a lasagna.

Mom used to spend all day making lasagna the way a middle aged Italian immigrant showed her and wrote out the recipe for. She would make it every few years for dad’s boss when Dad needed a raise and it worked every time. But it literally took from like 9-5 to make.

No idea if it’s keto but the palmini noodles make for a pretty good low carb lasagna
