Keto Friendly Fat Head Pizza & Sandwich Rounds (Update on 2nd page)

Here's where I got the recipe: ditchthecarbs.com fathead pizza
1¾ cups (approx) shredded/grated cheese (mozzarella or other)
¾ cup almond flour/meal
2 tbs cream cheese
1 egg
+/- salt to taste
½ tsp dried rosemary/ garlic or other flavorings
1. Put the shredded/grated cheese and cream cheese in a microwaveable bowl. Microwave on HIGH for 1 minute.
2. Stir then microwave on HIGH for another 30 seconds.
3. Add the egg, salt, rosemary (or other flavourings) and ground almonds, mix gently.
4. Place in between 2 baking sheets and roll into a circular pizza shape. remove the top baking sheet. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
5. Make fork holes all over the pizza base to ensure it cooks evenly.
6. Place the baking sheet with the pizza base on a baking tray or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.
7. To make it really crispy and study, flip the pizza over once the top has baked to a golden colour. I turn the pizza onto the baking paper I used to roll out the pizza base, then slide it back onto the baking tray.
8. Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 425F for 5 minutes.

There are lots of pictures online as well as some youtubes on how to do it, like this one: LINK
I used a rolling pin and my hands to spread the dough, instead of the method recommended in this recipe.
We can't find our pizza stone since the remodel. We packed the whole kitchen up, but maybe we left the pizza stone in the oven when they took it away?! Who knows, so I used a baking pan and it was fine.
I just used plain tomato puree. I think I should have added some herbs to it or bought some with them in it. I didn't think my overall flavors were pizza-ish enough.
And it wasn't cheesy enough. Anything wrong with the pizza was my fault, since the toppings are your own choice to make. I sauteed fresh mushrooms and browned some Italian sausage. I decided against the pepperoni I had, but will definitely use it next time.
Someone in the puttadaforkdown thread said this pizza is a game changer, and I agree. Hardly any carbs in the crust and it's easy and good!

Almond flour keeps you in ketosis?

Why do you always answer questions I ask other people?

Crispy and good! It needed salt, though.
See? Not floppy.

I guess I'll find out. According to other people, it does.

I thought you were just asking general questions to people reading the thread.

One portion has 2 carbs. Not sure how many portions she used but I could see staying in keto using almond flour. One again, no clue how much she used compared to one portion.
Nice job Darla. Looks like a real pizza. IWEI.

Thanks for that info.
I think this recipe portions the pizza into six pieces. I ate two, but I didn't cut very evenly.
The carb count is for the crust. Your toppings could add carbs, too, so you have to be cognizant of that.

Recipe has been added to the recipe thread. I also changed up some of the clumsy wording of the recipe author.

If I want to know something from you, I'll ask you, nerd

Has less carbs than I thought
6g for every 4tbsp = 1/4 cup
18g in her recipe
1 cup of almond flour is about 90 almonds.

I do a similar recipe but I use riced cauliflower
Posted on 5/27/16 at 10:31 pm to BACONisMEATcandy
It's been awhile, but I've done that, too.
I think the fathead crust is easier and has the texture of other pizza crust, while the cauliflower crust has fewer carbs.
