I'll stick with my copy of his Chicken Andouille Gumbo from a class he did in Houston, and the notes I took that night. Lots more detail.
Speaking of, the CA mix that his corp. sells was so bland that I added it to the compost pile. It made a gumbo that came out dusty-tasting.
I hope they'll continue to sell his spice blends, several of which are my 'secret ingredients' for otherwise bland Virginia Piedmont sourced dishes.

Already have an idea in mind for what I will do with it. It’s not terribly big and I think a wood frame would look nice with it. I will back light it with some warm LED lightning, not that cheap white and cold stuff you see around the windows of lower grade convenience stores. I just hope they are willing to sell it to the public and not an institution like the food and beverage museum or whatever they are calling themselves this year.
