Just made my first cracklins (images added to OP)

I bought a pork shoulder to smoke, and after removing the hide, I decided to see if I can make cracklins.

I rendered them in a cast iron wok for about 45 minutes, then removed them to cool. I raised the heat of the oil until it lit a match. Place the skins back in the oil for about one minute.

Came out pretty damn good, better than I was expecting. They may be little over done.

Kudos to you. My first try was an utter failure, and my subsequent attempts have improved to the point of edible, but I ain't winnin' any competitions. I do think practice is key, or direct observation a whole bunch before you try it out on a large scale.

The secret maybe doing a very small batch. This was the hide of a 8lb shoulder. I'm not even sure if you are suppose to use that hide, but I figured hide was hide. There wasn't any hair.

I was surprised how easy they were to make (other than having to stir for 45 minutes).

If my wife thinks they are pretty damn good, I must have done something right. She is picky as Hell and usually hates my experiments.

I learned how to make them in less than a minute from watching a YouTube video. I didn't realize you don't need oil to make them.

I did the same thing with a butt hide, but don't think I fried them enough, kinda rubbery.

I think I over cooked mine by about 10 minutes. They are crunchy with soft centers, but the crunch is just a tad too hard. Not break your teeth hard, but just hard enough to where you have to bear down on first bite.
