Jambalaya using Cauliflower Rice Recipe?

Does anyone have a jambalaya recipe that uses cauliflower "rice" instead of...just...rice.

I know that it sounds sacrilege but I was wondering if anyone here has tried making it.

Not what you're asking for, I know, but here is a jambalaya with cauliflower from a respected local chef:

Vegetable Jambalaya

1/2 onion
1 bunch green onions
1/2 bell pepper
1/2 eggplant
1 zucchini
1 stalk celery
4 toes garlic
3 Tbs parsley
1 banana pepper
1/2 head cauliflower
1/2 tomato
1 turnip
1 carrot
3 Tbs chopped pimiento
1 jalapeñio
1 cup chicken stock
1 cup rice consisting of 1/2 cup of Uncle Ben's and 1/2 cup of long grain rice, washed

1. Clean and wash all vegetables. Dice all very fine. Heat in a sauté pan olive oil and a small amount of butter. Add carrot, onion, green onion, bell pepper, eggplant, celery, garlic, banana pepper, turnip, and jalapeño. Sauté for a few minutes and add rice.

2. Stir in. Sauté for a few minutes, stirring constantly.

3. Add 1 cup chicken stock and 1 cup water to mixture and the cauliflower. Place in a 500-degree oven for 18 to 20 minutes covered with butcher paper. Take rice from oven and stir in remaining vegetables. Stir well. Salt and pepper to taste.
