Thanks for the help guys. Everything turned out great. Out of 30 people 25 had never had Jambalaya and they all had seconds and thirds.

I cut back on the stock a little and boiled it, after putting in the rice, for about 7 or 8 minutes.I then put it on low and covered for 25 minutes.

That 7 or 8 minutes was great. It gave me some time to scope things out.
