Jambalaya grease

After browning meat in cooking oil, how do u drain the grease prior to putting in onion...I have a 15 gallon pot.

I don’t remove grease until after i add the chicken stock and bring to a simmer. Grease floats to top and I skim it off the top with a big spoon.

I’d rather use the grease in their to sautée the veggies.

ETA: I don't use cooking oil. I either brown bacon and use drippings or use Hot Belly Bacon Grease.

I don’t use oil but I leave the grease from the meat in there

Yep, I do this with my jambalaya and gumbos. All that grease floats to the top and is easily skimmed off.

Cook down a pound of chopped up bacon and use that grease instead of cooking oil

I scoop out what I can get out with a ladle easily and leave the rest on one that big. Some grease in a 15 gallon jamb isn't necessary a bad thing. You can skim off the top when you get it all boiling if you don't want any grease in it. That's what I do.

you dont add any oil, thats why you are using a boston butt because the fat renders down to create its own grease and thats where most of your flavor comes from.

if you are adding oil to lean portion of pork instead of using a fairly fatty boston butt then you arent doing it right

I disagree but to each his own. Everyone has their own process but to say someone isnt doing it right because YOU say so is comical.
