Jalapeño corn bread

I know it’s nothing special, but anyone have any special tricks or recipes?

Make candied jalapeños. This adds a sweet element to cornbread or hush puppies. There are plenty of recipes out there but the basic concept is to boil the peppers in a vinegar and sugar solution. I recommend draining them well and absorbing as much liquid, with paper towels, as possible before adding them to your batter.

I add a can of creamed corn and a cup of sour cream.

I do that too. There is a great Mexican corn bread recipe in the cookbook thread on here. I think page 75-ish

Here's the recipe that I use. It's my favorite.
1 Cup yellow cornmeal
3 teaspoons baking powder
1 teaspoon salt
1 cup sour cream
1 can creamed corn
2 eggs
1 cup grated sharp cheddar
1/2 cup oil
2 jalapenos, diced
Bake at 350 for 45 minutes.

Yeah, it's two slightly beaten eggs, 1/4 cup oil, 1 1/2 cup self rising cornmeal, can of creamed corn, cup of sour cream, and dice jalapeños. Add some shredded cheese when mixing and then buttermilk while mixing to get it to right consistency. Once it's almost done baking, add a little more shredded cheese to top of it. Add more jalapeños than you think is necessary. The sour cream and cream corn I guess cut the heat more than you think. It's is VERY moist cornbread. It's really good. Otis knows what he's doing

Jalapenos can be hit or miss. Turn it up to volume 10 and use habaneros
