Is it possible to get leftover blooming onion crispy again?

High heat in the oven, preferably convection.

Oven at 350 until the moisture is cooked out & crispy

I’d be willing to bet a few minutes in 375* oil would work fine...

Low broil in the oven...keep an eye on them...flip them one time after once they start to brown again.

Get a wok hot with a decent skift of high heat oil. Toss the blooming onion in. Toss like you're throwing an omelette for a couple minutes.
