Read a post on another forum with pictures of Cajun Faud Dressing.
Any of you Cajuns ever heard of this or make it?

Never heard of it. Don't look too great, but I'd try it.

Another poster never heard of it either but found this from the River Parishes:
Cajun Faud Dressing
(From Mrs. Lucille Duhe and her mother, the late Maria Cambre of Reserve)
3 lb. Boston butt – cubed into ½ inch pieces
3 lbs. gizzards – take hard skin off and chop up
1 lbs. chicken livers, chopped
1 lg. onion
1 pk. fresh parsley
3 doz. oysters
10 medium sweet potatoes – boiled and skinned
Salt and red pepper to taste
1 pack shallots (optional)
Boil potatoes, peel and set aside.
Cook Boston butt with onion and seasoning(salt and pepper) on low heat.
Cook gizzard with oil and a little seasoning separately. When pork is about 1/2 done, add gizzards and liver. Cook for about 45 minutes to 1 hour.
Add parsley and oysters for about 15 minutes.
Add potatoes until desired consistency (like mashed potatoes) is met. Keep tasting and adjust seasoning. Serve with roast turkey or chicken.

I know ppl in the River Parishes who make it, but it’s not a DTB thing, so it’s not in my culinary repertoire. I think it’s also made in Quebec, but I don’t know if the St John/St James versions are anything like the Quebec kind.

I’m from St Mary parish originally and we never made this, but lookin at that recipe, I’d try it.
Why not...
I like all the ingredients!

That? That’s just rice and gravy

Yes. River parishes here. My mom and grandmeres made "farre". Basically, it's a meat based dressing that you eat on bread as a sandwich or combine with rice for a rice dressing.
My mom made many a "dressing sandwich" for some small town wedding receptions. Never ever have seen a recipe like the one you posted, though. Pork, liver, gizzards? Yes. Sweet potatoes and oysters? No.

Here is John Folse's recipe for it.
Chef John Folse Farre
No oysters in his but it does have sweet potatoes. The kind i grew up eating is very close to his recipe minus the sweet potatoes.

Looks like the dressing they make at Palmetto Pig in Columbia SC. Some really amazing stuff.

I used to make a potted meat spread that looked close. If you are willing to accept the fact that no one actually knows what is in potted meat, it could be very close. My potted meat spread was tasty, but I never followed any one recipe, so I probably made this at least once.
Serve between two slices of Sally Sunflower white bread.
Pairs well with a 6 ounce glass of Jack Daniels, straight up and a couple of small powdered sugar donuts.
Sadly, I gave up white bread years back.
