cajun butter

Never was a fan of the stuff but they sell a butt-load of it so... I prefer a 24 hour dry brine with coarse kosher salt.

Sticking with the Cajun butter for the 2 birds we're frying up this year. Has never failed us yet.

Cajun butter injector for the bird we are frying.

my personal secret is that I separate the skin and run a shite ton of tony's under the skid, then I mix tony's and butter to make seasoned butter and smear that shite all over the outside of the bird. let it sit like that overnight before frying the next day.
