Pho is very heavily french influenced. the broth is essentially a french consomme, and charring the cloves and onion is an extremely french technique.

I agree...rice noodles and basil are distinctively Asian.

It truly is one of the best "Signature" dishes of any cuisine.

really? growing up Gumbo was almost always THE meal. Am i the only one?

I agree here.

I'll also say that the worst pho i've had was worse than the worst gumbo. Some kind of soup mix was involved I think...

Yet it's a relatively new thing. Per wikipedia (yea i know), pho was born in the 20th century.

That would make sense given the strong french influence involved that was roughly during the 1854-1954 (or whenever Diem Bien Phu was).

Okra/Andouillie Pie sounds even better...

I'm pretty sure Pho predates the French occupation of Vietnam by centuries.

no, pretty sure Pho came about in the last 100 years. It was heavily influenced by a french vegetable and beef soup with a consomme type of broth.

It's remarkable in that it has become the national dish in such a short time in a very old country.

Is it possible that the dish we know of today is a French influenced version of a dish that existed in Southeast Asia for centuries? A fusion of styles if you will...

You might mean that they're not French but it's certainly not exclusive to Asian cuisine.

And Pho is definitely better than Gumbo.
