When we redid our kitchen in Hoboken we went with a Liebherr counter depth fridge a Bertazzoni Ferrari red stove and a Bosch dishwasher

No experience with True residential, but the reason you see it in many commercial kitchens is because it’s cheap compared to better brands...and cheaply made.

What are you looking to do? Impress friends, how much do you actually cook?
The only true difference in better cook tops is their maximum btu's. Commercial kitchens have 25-30k btu cook tops, where as a crappy home stove top will be 5,000. Now a days you can get a $1000 cook top that will put out 20k btu's though.
The rest is honest for dick measuring and looks.
