Ideas for Leftover Ribs

I have a freezer bag full of leftover smoked ribs from a cookout. I've been eating them as is and also making rib sandwiches (homemade McRibs) in the air fryer. I'm looking for any other ideas on how people have used leftover ribs.
Unfortunately, about half the bag was an overcooked slab while the other half is pretty good.

Pull the meat off, throw it in a skillet with some citrus, like Oj or lime. Then make quesadillas.

What about deboning the meat. Then mixing with rice and cooked down onions to make stuffed bell peppers with the rice dressing.
Or improvising to make a jambalaya with the meat and sausage.
Or do some street tacos

Debone the meat. Add to mac n cheese with some sautéed veggies

I've got everything I need to make nachos and rib mac n cheese here. These other ideas look really good too. Looks like I will be making a trip to the store tomorrow.

Sometimes I don’t even debone but my favorite use for leftover ribs is a pot of beans.

I like the taste of stock from smoked rib bones.
juice for red beans, bean soup, etc.

I just keep eating ribs until they are gone, breakfast lunch & dinner.
