Ideas for leftover chicken and sausage

I pretty much always make jambalaya with all my leftover chicken and sausage.
What are some other dishes to transform the last leftovers into another meal?

For a quick midweek meal, I like to brown the chicken and sausage up real good, then toss in some red sauce that I made ahead of time and had in the freezer or if I don't have any, I'll use jarred (gasp).
Boil up whatever noodles you have on hand while the meat simmers in the sauce and you have a tasty chicken and sausage marinara in about twenty minutes.
I've only done this with smoked sausage, though, so I'm not sure how it would work with other kinds. Spaghetti sauce will take pretty much whatever pork or poultry you can throw at it, though.
