I tweaked an old poor college meal to make it pretty good.

In school I, like many used to eat ramen. Not good trendy ramen, the cheap 10c a pack stuff. Anyway. My roommate used to like to eat the noodles and I would make won ton soup with frozen dumplings.

Yesterday I was making a stir fry and wanted some dumplings. I only had Korean Bugolgi dumplings from Costco. Well made but designed to be fried.

I get Shin ramen which is really good. I discarded the noodles. Then took 3 of the 4 packs (no Bonito flakes) and added Chilli oil from a different pack. Mixed that with some frozen trinity. Brought base to boil and added 8 or 9 dumplings. I added an extra cup and a half to water.

Easily the best dumpling soup I've ever had. Of course no pictures until leftovers the next day.

Sometimes you just want something quick and this was as quick as ramen and had a really good taste. Though the Costco dumplings helped there.
This soup may replace my egg drop soup.

I used to crack two eggs in to the boiling water before adding the noodles to get some protein. I lived off of that for a month or two at one point of my life.



This stuff is delicious. I add a over easy fried egg, green onions, and whatever meat I have leftover in the fridge.

I did the same but after adding and cooking the noodles and stirring in the broth packet. I liked the flavor it would give to the eggs

I had 2 eggs as soon as I turn on the heat, perfectly soft boiled once the noodles are done.

ETA: for some reason I love something pickled in there as well. Mushrooms, okra, etc.

This seems like a fun challenge.
One of my old college meals was to take a link of frozen boudin (sometimes even crappy wal-mart boudin), defrost it in the microwave, throw it in a frying pan, then add cheese and a can of drained sweet peas. I could stretch a link of boudin into two small meals doing that, especially if I then scooped up the contents of said frying pan and plopped it on po’boy bread with a little ketchup or spicy mayo.

I upgraded to the Lipton Extra Noodles packets. Add Chicken or beef, whatever's in the fridge, and a hearty scoop of kimchi. Microwave for 3:30, then crack an egg and go for another 1:00-1:30. Nice runny yolk and the white is still soft enough to thicken the broth. Great cheap, cold weather meal.
