I salted my prime rib road earlier today, and plan on cooking it Christmas Day

Have never salted one two day before I plan to eat it, usually just the day before. I'm wondering if the extra day will make any difference...

I don't have room in my fridge for 5 days. I usually buy it the day before.

You’re talking about “Christmas Day” but I assume you mean 2019? That thing needs a good 11 month sous vide with a 1 month rest

I did mine today too. I usually do 3 days but got distracted (drunk) yesterday.
I think more time makes a difference, but I have never done a side by side so could be bullshite.

It'll help get a good crust on, not much more than that and may help retain a bit more moisture.

I don't expect it to make that much difference, but we'll see. The main reason I've always son 24 hours is that when I've done a standing rib roast, it's always been a somewhat sour of the moment idea...
