I need a good breakfast bake recipe for a party of 8 or so.

Sausage and rice breakfast casserole

I am not sure if this dish has a name. We have cooked this for years and our family likes it a lot. I'll call it Sausage & Rice casserole.

This recipe made one large and one small casserole.

You'll Need:

2 pounds of sausage, browned
2 1/2 cups of rice (basmati) cooked.
4 stalks celery - diced and sautéed in butter
Optional - one medium onion, diced
2 cans cream of celery soup, diluted half water and half soup.
Black pepper and salt to taste

- Cook the rice and hold until assembling the casserole.
- Brown the sausage
- Sautee the celery. If using onion, Sautee it with the celery
- Set up the casserole dish with half of the rice you intend to eventually add.
- Sprinkle the sautéed celery/onion over the rice.
- Add a portion of the sausage.
- Then add the rest of the rice and the rest of the sausage.
- Dilute the soup half and half soup/water and pour the diluted soup over the sausage.
- You may store the casserole at this stage in the refrigerator or freeze if desired
- Cook uncovered at 350 degrees F for 30 - 40 minutes until the soup is bubbly and the dish is slightly browned.
- It will take 20 - 30 minutes longer to cook from frozen
- Serve with scrambled eggs and biscuits if desired.

I make our son (SR) this year a breakfast casserole each week. This will ne on the list for this weekend.

Would eggs mess anything up here? Love the rec, thanks

eggs? Should be ok. I just usually scramble or fry them and serve on the side. If you want to mix them in, you will be fine.

Looks good MD.

That would also work well with shredded hash browns on the bottom layer done like hash brown casserole!!!

Looks similar to what we do. I cook sausage, then mix it in with frozen hashbrowns and shredded cheese and put it all in a baking dish. Crack about a half dozen eggs and whisk them up and pour over the top and bake it. Then top with more cheese at the end if you want to.
