I've grilled them for the first time a few weeks ago and came out amazing. What's the best way to cut them for the grill? I cut them in fourths but felt the inside wasn't cooked enough.

Nope. I think they are terrible, and I personally know very few people who actually like them.

I tried some borscht the other day. An elderly lady from Austria who I work with cooked a pot of homemade borscht and it was delicious! It's so much better than canned beets, or beet juice, which is NASTY!

I've concluded that beets themselves are not the enemy, but rather the pickling of beets in lemon juice or vinegar that brings out any bad flavor that lurks within.
