3 lbs. of boudin really isn't that much to eat.
I love to make fried boudin balls and use saltine crackers as the coating. I'll crush them until they are a fairly fine consistency, roll boudin into a ball, dip in an egg bath and roll in the crushed saltines then fry until golden brown.
Remove them and place them on a wire rack to drain and cool and enjoy.

Honestly your best bet is to just Google "scotch egg recipe" and substitute the boudin for the sausage. It was so long ago I can't remember my exact process.
All I can remember is how much of a pain peeling a soft boiled egg is.

I went with a boudin hash for breakfast. Still have a bit left, may stuff a pork tenderloin for dinner. Thanks for all the ideas.

There is a boudin dip online that has cream cheese and cheddar. It is baked. It was a hit for football parties.
