How would you use about 10 smoked leg quarters in a gumbo

I smoked about 30 lbs and vacuum sealed some. Can I just peel and put in gumbo or put in whole

Debone them then add the meat 20-30 minutes before the gumbo is done.

Thaw, debone. Roast bones in oven. Make stock with the bones. Use stock and meat in the gumbo.
Profit.

Like this, except I would skip the step in bold. No reason to roast cooked bones.
