Oven. Then hit it on the cast iron. Lottsa butter.

ETA

Depending on the size and cut of meat.

Cover steak in salt and crack pepper. 30 mins in the oven on 250. On an elevated rack. With a square of butter on top.

Get a cast iron as hot as possible and add more butter. 1 min each side. Rest for 5 mins. Enjoy.

Sous vide at 130 for 2 hours and put under the broiler 1 minute per side
