4.5 cups for 5 gallons gumbo.

yeah but it kind of looks like the Roux broke not dissolving about a quarter inch still floating on top

You can scrape that oil off the top pretty easily.

If the rest incorporated, you can spoon that off. What were the temps of the roux and stock?

I'm concerned that you won't have enough roux. What's the texture of the gumbo right now?

It taste good could be thicker but I skimmed about 1 gallon off the top seems like alot. almost like all the roux wouldnt resolve. This isnt the first time this happened.

May have been a temp problem. It's going to reduce a bit during the summer. If it's still too thin, you could make a quick roux to add or go to the jar.

after adding the okra texture was right taste is really good but 5 gallons reduced down to about three and a half gallons. After skimming ans cooking down. Pics tomorrow

5 pints of roux. 16 1 cup servings in a gallon.

For that amount of gumbo I generally wind up with a quart and a half of roux and I make a very dark brown roux similar in color to dark chocolate.

If you wind up with more, just put it in a jar and toss it in the fridge to save it for the next time you need roux.

I make at least a quart every time I fry chicken at the house to use up the oil I use for frying the yard bird.
