How much will I need to make? Many will be trying it for first time.
For a simple chicken and sausage jambalaya what am I looking at on ballpark price?

I don't use Rat's badass (seriously) calculator but for that amount of people I'd probably do 4-5lbs of rice with 12-15lbs of meat..
4-5lbs pork
4-5lbs chicken
3lbs smoked sausage w/ 2lbs andouille.
For that amount of rice I'd imagine I'd use ~a gallon of stock.
That's just me. I'm 100% positive someone will shoot down those ratios though... . But it has worked for me for 15 years of catering so I ain't changing shite.

What's the meat yield on that out of curiosity? 12lbs of meat?

That sounds about right. Maybe a little less.
