Totally from scratch?
Say about about 3 qts of sauce plus a lot of meatballs.

I usually dice about two dozen fresh tomatoes when I’m making a sauce.

Just buy a few tin cans of the San marzano peeled tomatoes

Canned tomatoes are always better than fresh for a sauce.

Grab a can of peeled whole Cento San Marzanos. Standard 1 can per 2 people you're feeding. I think they're 12 oz each.
