I made shrimp stock last Saturday and put it in the refrigerator with the intention of portioning it out the next day and freezing it.
Well it’s a week later and still in my fridge in a bowl with a non airtight lid.

What do we think here?

I would have no problem freezing it.

My initial reaction was to ask why you waited a week and then I thought about all the things in my fridge well past the expiration date. I would think the process of making a stock would kill bacteria so a week, in the fridge, should be ok. Just freeze it immediately and make sure when you use it next that it comes to a boil.
