How long is cryovac beef good for past sell by date?

Have a brisket I want to smoke, but don’t really wanna deal with showers.

Honestly, the sell by date isn't that important. It is the pack date and the butcher would know. Stores have to put a sell by date on it, but I would assume it is still good as long as it didn't have any holes in it.

Daniel Vaughn with Texas Monthly has cooked cryovac brisket that spent 6 mos and even a year in the fridge, and it was edible. The one year was pretty bad; the six monther less so but still not good. But they didn't make anyone sick.

Some competitive BBQ people intentionally let them age in the refrigerator a month or so.

This makes me feel good about a 4/5 sell by date. I’ll just call it wet aging and smoke it in a week or two.

Yup, it's basically just wet aged.
