How long do you roll with the turkey and ham?

I’m done with it after 2 days. How long is it safe? 4 days is the rule of thumb.

The turkey I have left over from T-Day is getting cooked down in a thick cream sauce and vegetables to be used for turkey pot pies this year.
Some years it's used in a turkey/sausage gumbo or turkey soup.
With ham, after a couple days I just vacuum seal what's left over to be used in beans or split pea soup.

Made gumbo with the turkey last night for today.

Turkey was gone by Saturday. Ate what we could and discarded the rest.

Shouldn’t the ham be good for a while?

The short answer is yes, the ham is good for a couple more days because it’s cured.
I’m thinking of ham that has been heated, glazed, and sliced and then refrigerated as leftovers. Since it’s been handled and exposed to the elements, the safe play is to assume it’s safe for a few days. It will definitely last longer than the turkey, but I would just recommend a day or two longer.
Go to a deli. A ham in the deli has a shelf life of 60-90 days, probably. But once you slice it and bring home the slices, that sliced ham doesn’t last as long.
