How long can uncooked brisket stay in the fridge?

Bought 2 small briskets yesterday and didn’t get to cook them, should I freeze them ? Or refrigerate? I plan to cook them next Saturday. Thx

I'd probably freeze them since it'll be that long before you cook them

If they're still vacuum packed, personally I wouldn't worry about it.

I kept a beef tenderloin in the fridge for 2 months before cooking it since it was vacuum packed. Of course this was after talking to a buddy who was in bovine medicine for his entire career.

Do whatever you're comfortable with.

It’ll be fine in fridge. Lots of folks leave them in cryo wrap in fridge for 30 days before smoking to age the meat

Their wrapped with the foam bottom and saran wrap on top, I should probably freeze right?

Not in Cryovac, Still should be ok, but I'd freeze.

What I'd worry about would be an off-taste.

Typical vaccum packed brisket should have a use or freeze by date. I think you will be fine. You dont need to freeze it for 1 week. Also, if you cooking next Saturday you'll need to remove it from the freezer Wednesday, so you really only freezing it for 3 days.

Bought two last Monday with a good til 9/1/20 date. Starting one late tomorrow to eat on Tuesday and freezing the other one.
